Fix GraalVM build script and configuration to make it compatible with the current light-native-lambda code #132

Current Issues
- Reflect configurations are out of date
- Resource configurations are out of date
- GraalVM build script fails because of class instantiation issues
Goal
- Either change the code or graalvm configuration to be able to build graalvm images.
