What Does This Do

Run Java 26 as a default JVM under "stable" which refers to the latest stable Java version

Motivation

Java 26 is in its RC phase, soon to be GA-ed in March. Since no new features will be added from here-on out, we can start testing 26 as a default JVM.

Additional Notes

I confirmed that "stable" equates to Java "26" with the following print line in this test job:

Contributor Checklist
