DOC-5241 Cassandra Native Protocol v5 support

Prepare documentation updates for v5 support in the upcoming ZDM Proxy release.

⚠️ Don't merge until the next ZDM Proxy release goes out.

Questions

Questions for @joao-r-reis :

1. Is the automatic forced downgrade still possible? Or will the connection fail if the requested version isn't mutually supported?
2. Was the performance impact observed in our DS/IBM tests, or from another source (such as Cassandra/Apache community testing)?
3. Was the performance impact observed only when using ZDM Proxy, or can it happen when using V5 at all (with or without ZDM Proxy)?
4. What are some factors or types of queries that make the performance impact more likely to be observed?
